Vegetarian Thali

I am looking forward to teaching you how easy it can be to make healthy, delicious vegetarian/vegan food. A thali is a large Indian plate with an array of small dishes. A vegetarian thali will include a curry, dahl, bread, rice and something sweet.

Learn how to create a Gujarati feast.

1. Aubergine & Potato Curry

or Cauliflower, potato and pea curry. Far tastier than eating plain vegetables.

This is a vegan/gluten free curry.

2. Moong Dahl or Tadka Dahl

A comforting lentil curry, a staple in my household. Served with plain yoghurt and rice for a simple nutritious dinner. Another vegan/gluten free recipe.

3. Roti/Rotli

Basically this is unleavened bread. Called rotli by Gujaratis Once you master these you will never again want to eat a pitta bread with your curry. If you're not watching your waistline, we can make deep fried breads called puri instead.

This bread is vegan.

4. Vegetable Pulao

Eaten as part of a meal or as a stand alone dish, this is a great recipe to have in your repertoire. Use your favourite vegetables to make this tasty rice. Vegetable pulao is vegan and gluten-free

5. Gajar nu halwa (carrot fudge)

This is a gorgeous  desert made from grated carrots, full cream milk and garnished with almonds and pistachios
