Dhansak is a typical Parsi dish and is made by cooking lamb or chicken with a mixture of lentils and vegetables . It has a sweetness which comes from pumpkin (or any type of squash) and sourness from lemon (never pineapple as you find in high street Indian restaurants). The long slow cook is worthy of the end result and it will taste even better the following day. It is traditionally eaten with caramelised rice which I will also show you how to make
This curry was made for our family gatherings and has special memories as it was taught to me by my late grandmother, Dina.
