You will love this prawn curry. Simply marinade the prawns for a few hours then stir fry with tomatoes and spices.

YIELD: 4-6 SERVINGS
Prawn marinade ingredients
- 750g prawns (de-veined)
- Juice of 1 lemon
- 2 tablespoons garlic paste
- 2 tablespoons oil
- 2 teaspoons salt
- 2 teaspoons ground cumin
- 2 teaspoons green chilli paste
- 2 teaspoons ground roasted cumin
- Half a teaspoon turmeric
Prawn masala ingredients
- 50 ml oil
- Half a teaspoon methi (fenugreek) seeds
- 2 large onions chopped
- 4 fresh tomatoes chopped
- 1 teaspoon salt
- 1 teaspoon garam masala
- 1 handful fresh corriander
In a large mixing bowl mix all the marinade ingredients and marinade the prawns for at least 4 hours
When you are ready to cook, heat 50ml oil in a large frying pan and add the methi seeds. Be careful not to let them burn. Once they have turned a reddish colour, add the onions and cook until they are golden brown.
Add the tomatoes, salt and tumeric and cook until the oil separates
When you are ready to eat, pour in your marinated prawns and cook for a few minutes until they turn pink.
Garnish with fresh coriander and tuck in!!
