Stuffed aubergines

PREP TIME 15 minutes

COOK TIME 30 minutes



Ingredients for stuffing

  • 10 baby aubergines, slit down the middle
  • Half a cup chopped peanuts
  • 1tsp grated ginger
  • 1tsp crushed garlic
  • 1 tsp green chilli paste
  • 50ml oil (rapeseed is best)
  • 1 tsp ground cumin
  • 2 tsps ground coriander
  • 1 tsp sugar
  • Half a teaspoon turmeric
  • Half a teaspoon garam masala
  • 1-2 tsps salt
  • Ingredients for tempering
  • 50ml oil
  • Half a teaspoon mustard seeds
  • Handful of fresh coriander for garnishing



  • Mix all the ingredients for the stuffing and push into the aubergine.
  • Heat the oil in a large wok or frying pan and add the mustard seeds and let them splutter for a few seconds before adding the aubergines. Fry covered for about 15-20 minutes until they are soft and squishy inside.
  • Sprinkle with fresh coriander before serving.
